Why do they have to mine salt? Can't they get it by evaporating seawater or something?

Sea salts have different mineral composite than rock salts do, so they have different flavors and textures. Different flavors and textures lend themselves to different culinary uses. Rock salt is also more desirable in many industrial uses for... some reason I don't know. =D

I thought it was all just natrium chloride. (Natrium sounds cooler than sodium)
