Would all the Ghibli movies count as movies, or anime? I'm not quite sure, so just put down Sen to Chihiro no Kamikakushi and Mononoke-hime for either. O.o

~Lord of the Rings: Oh my god. It's just so beautiful. All of them. Some of the tracks almost make me cry at times. (Pathetic, I know..)
~Pirates of the Caribbean had some really good stuff, but most of the tracks were basically remixes of each other, and there were only a couple of unique tracks..But those few were really cool.
EDIT: Aaah! I forgot Anastasia! I love that movie! (The animated one, that is...) Once upon a December rocks!

Anime
Noir - Its opera and European techno mixed together. I suggest listening to Salva Nos (its the batte theme and it's really good).
Rurouni Kenshin - The OAV soundtrack is some of the best orchestral music I have ever heard. The anime soundtrack ain't too shabby either (very good BGM.)
Oh My Goddess - I haven't seen the TV series yet ( I've only recently heard about it.) but the music from the OAV is cute and catchy. The movie is awesome. Coro di dea is a very nice song, and the ending theme "Try to Wish" is very well-sung and inspiring.
Last Exile - I can't recommend this soundtrack enough. It has a great range of orchestral music, from folksy European to booming battle music. The opening theme "Cloud Age Symphony" is cool and trancy and the ending theme " Over the Sky" is hauntingly beautiful.
Inu Yasha - I really like the BGM and official theme for the series. The opening and ending themes are pretty good too. My favorite is "Every Heart" which is sung by BoA.
Movies
Forrest Gump - I love the orchestral theme (the one that starts with the feather blowing in the wind.)
Tarzan - Phil Collins does a great job with all the songs and it creates a nice mood.
Anastasia - Good songs all around, although my favorite is the ending theme "At the Beginning" which is sung by Richard Marx and Donna Lewis.
The Sound of Music - All these songs are classics, and they are really well sung. The final rendition of "Edelweiss" is very moving.
Video Games
Legend of Zelda Ocarina of Time - This is some of the best music around. Even the ocarina themes are good, although its a bit strange they didn't have the traditional overworld theme.
Metal Gear Solid - Very good music. It actually adds tension to the gameplay. The battle theme is very good and gets your blood pumping.

Yeah, I have a lot more, but right now my brain is dead; I only remembered these two because a) Kiss from a Rose was playing today in Burger King, and b) in this case, the soundtracks were far superior to their respective movies XD
